Set up a Z level you want your farm plots to be built UNDER. The simplest method here is to just allow the water to flow into the open area, become standing water, then close it off, allow it to flow to eventually lvl 1 and then evaporate. Using channels and z levels above/below the crack allows you to do things like put in wells, channel out farm plots, put in water falls, washing stations, foot baths, etc. Make sure you leave in supports so you don't get a collapse. The key element is to ensure the water evaporation mechanic of standing level 1 water to remove the water you are pouring into that open Z level by having a large area where the water can flow. The water flows into it and you now have a relatively reliable non FUN inducing water flow at that Z level. Then, AFTER the cracks and flood gates you dig out a very open space at that Z level. This is generally bad because you can't fix it. The issue with the flood gate is items get stuck in the flood gate and block it open. They both kind of do the same thing once you get used to the water flow mechanic. The other method involves using a lever triggered flood gate. This crack is a water pressure reducer that limits water flow. When you dig out a block AND you dig out another block that is octagonally placed from the first block (i/e not N/S/E/W but NW/NE/SW/SE from that block you create a tiny space that water can flow through the crack between blocks. There are two sub methods to it, one is moderately permanent and the other can be finicky so it's best to be redundant with them. Method 2 involves either a flowing stream or aquifer. it just leaves a hole in the future farm plot. Sometimes the pond will have deeper sections in it that you can't really fill up. This method will get you a general shape you can get a larger farm plot into without too much difficulty. If you channel out that pond into a rectangular shape the water will flow out into the rectangle. When you embark you may have little ponds of stagnant water at lvl 7. Once it evaporates what's left is generally always usable mud you can plant on. Once a standing water is water level 1 it will start to evaporate. The heavier the water level generally and the longer it stays on that block the heavier the mud you will lay down. On both above ground and under ground, if you can lay down or manipulate by channeling any form of standing water 1 water level or higher at that z level you will gradually lay mud down for planting. You can choose an embark site that had shallow / deep soil. Generally the first couple Z levels down depending on the embark will have plantable soil. Just put the farm plot down either above ground or below if you have plantable soil. There's some suggestions here in the thread but they barely scratch the surface.
